    Chipotle REAL THIN Nachos – Bring Your Nachos to The Next Level

    Chipotle REAL THIN Nachos

    Prep Time: 15 minutes | Cook Time: 2 minutes

    INGREDIENTS

    • 1 cup shredded Mexican cheese blend
    • ¼ cup diced red onion
    • ½ cup diced tomato
    • ¼ cup black beans
    • 1 box Chipotle REAL THIN Crackers
    • 1 tbsp cilantro, chopped
    • Lime wedges

    PREPARATION

    1. On a parchment-lined baking sheet, spread out a layer of crackers. Sprinkle cheese, beans, diced onion and tomato on top.
    2. Place in oven under the broiler and watch carefully for 1-2 minutes until the cheese is melted. Remove from oven.
    3. Garnish with cilantro and lime wedges.

    Southwest Chipotle Salad

    Prep Time: 15 minutes | Cook Time: 15 minutes

    INGREDIENTS

    • 1 cup quinoa, uncooked
    • 2 cups vegetable broth
    • 2 tsp chili powder
    • 1 tsp onion powder
    • ½ tsp cayenne powder
    • ½ tsp salt
    • 1 clove of garlic, minced
    • 1 cup fire-roasted corn
    • 1 cup cherry tomatoes, halved
    • 1 avocado half, sliced
    • ¼ cup cilantro
    • 3 tbsp pepitas
    • Chipotle REAL THIN Crackers, crumbled
    • Chipotle dressing

    PREPARATION

    1. Mix the quinoa, vegetable broth, chili powder, onion powder, cayenne powder, salt and minced garlic together in a medium-sized saucepan. Bring the quinoa mixture to a boil, then reduce heat to medium low. Cover and cook until fluffy (about 10-15 minutes). When the quinoa is done cooking, remove it from heat. Now fluff it with two forks. Set aside to cool. Reserve a little bit of the fire-roasted corn, cherry tomatoes, avocado slices and cilantro for garnish.
    2. Once the quinoa has cooled, mix in the remaining corn, tomatoes, avocado and cilantro. As the finishing touch after garnishing, evenly scatter the pepitas and crumbled Chipotle REAL THIN Crackers over the top of the salad. Add chipotle dressing to taste. Serve and enjoy!

    PANTRY PULL PUMPKIN CURRY SOUP

    Recipe by Karin Fisk | Prep Time: 30 minutes | Gluten Free

    INGREDIENTS

    • 1 tablespoon oil
    • 1 yellow onion, diced medium
    • 4 cloves garlic, minced
    • 2-3 teaspoons curry powder OR 2-3 tablespoons red curry paste
    • 1 teaspoon ground ginger OR 1 Tablespoon fresh ginger, minced
    • 1/2 teaspoon ground cumin (more or less depending on personal taste)
    • Dash of cayenne pepper (depending on personal taste)
    • 2-3 cups broth (veggie or chicken)
    • 2 tablespoons nut butter of choice
    • 2, 15oz cans pumpkin puree
    • 2 teaspoons sugar of choice (coconut is great here)
    • 1 can coconut milk
    • Salt & pepper to taste

    Garnish:

    • 1 can garbanzo beans, rinsed, salted and roasted for 45-60 minutes @ 375 to crisp; OR Roasted pepitas
    • 1 tablespoon coconut cream

    PREPARATION

    • Heat a large soup pot over medium high heat, add the oil until the surface shimmers;
    • Add the onion and sauté for 5 minutes until translucent, add garlic and cook for another 2 minutes;
    • Add the curry powder, ginger, cumin and cayenne, cook for another 1-2 minutes to release the fragrant oils;
    • Stir in the broth, pumpkin puree, nut butter sugar and coconut milk;
    • Bring to a simmer and cook for 5-10 minutes, remove from the heat;
    • After cooling slightly, puree the soup with an immersion blender or a vitamix.
    • Top with garnish of choice,

    Pie Time? It’s Never Too Early!

    Fall brings us a feeling of the holiday season. I know the weather is still not like close to winter at all, especially here in California. But I look forward to holidays all the time, who doesn’t love holiday treats and meals? If let me pick which food I want the most, it is pie! It’s never too early to bake a pie, right? Let’s just do it. Maybe not a pumpkin pie yet, but a healthy vegan chocolate cream pie with Mary’s REAL Thin Sea Salt Crackers.

    VEGAN CHOCOLATE CREAM PIE

    INGREDIENTS

    Crust

    • 1 box REAL Thin Crackers, Sea Salt
    • ½ c. melted coconut oil (or butter if not vegan)
    • ¼ c. coconut sugar (or sugar of your choice)
    • Optional: ½ cup shredded coconut
    • Pinch of salt

    Filling

    • 12 ounces silken tofu (firm or extra firm)
    • 1 1/2 c. vegan chocolate chips
    • 2 tablespoons coconut cream (or milk of your choice)
    • ½ c. coconut sugar (or sugar of your choice)
    • ½ teaspoon vanilla extract (or powder or paste or fresh)
    • Pinch of salt

    Topping

    • 1 can chilled coconut cream (or coconut whipped topping)
    • Shaved dark chocolate (optional)

    PREPARATION

    Crust

    • Preheat the oven to 350 (370 for high elevation)
    • Crush the crackers in a plastic bag, tapping with a rolling pin or mallet until course meal.
    • Pour the crumbs into a bowl and add the sugar and optional coconut, stirring to combine
    • Pour the melted oil over the mix and stir to combine
    • Transfer to a 9” pie plate and press with hands to cover evenly. Use a glass or the bottom of a measuring cup to firmly press the crust in there as best as you can
    • Bake for 15 minutes, or until the crust begins to brown.

    Filling & Topping

    • Melt the chocolate and allow to cool slightly
    • Puree the tofu, coconut cream, sugar, vanilla and salt in a blender or food processor until smooth
    • Pour into the cooled crust and allow the pie to chill for at least 2 hours
    • Whip the chilled coconut cream in a chilled bowl until stiff peaks form
    • Spread on the top of the pie and sprinkle with chocolate shavings before serving.

    SEA SALT

    INGREDIENTS

    • 6 whole ripe figs, rinsed, dried, and sliced
    • 4oz of plain goat cheese
    • 12 thin slices of pancetta cut in half lengthwise
    • 12 arugula leaves
    • 12 Original Black Pepper Crackers

    PREPARATION

    • Preheat oven to 400 degrees
    • Place pancetta in a single layer on a baking sheet
    • Bake pancetta until crisp *this can range from 6-15 minutes dependent on the thickness of the slices and the heat of the oven. We recommend keeping a close eye on them.
    • Drain pancetta crisps on a paper towel and cool (about 10 minutes)
    • On our Black Pepper Crackers, place the crispy pancetta, spread the goat cheese, and top with the fig slices and one arugula leaf

    • 2 heads of endives, sliced in half lengthwise

    • Cut the endives in half and arrange on a plate
    • Pit and dice the apricots
    • Spread goat cheese in the endive boat
    • Sprinkle the apricots into each individual endive boat
    • Add torn mint leaves
    • Drizzle glazed balsamic

    INGREDIENTS

    • 2 8oz containers of vegan cream cheese
    • 1 cup vegan mayonnaise
    • 4 jalapeños, seeded and sliced
    • 2 cloves of garlic, minced
    • 1 cup vegan cheddar cheese shreds
    • Salt & pepper to taste
    • ¼ cup cracker crumbs (Sea Salt REAL Thin Crackers)

    PREPARATION

    • Preheat the oven to 425 degrees;
    • Mix all the ingredients together reserving ¼ cup of the shredded cheese and the cracker crumbs;
    • transfer to one large or several small baking dishes;
    • Top with the remaining cheese and cracker crumbs;
    • Reduce the oven temperature to 400 degrees before putting the dip in to bake for 20 minutes.
    • Remove from the oven and enjoy warm or cold.
