    INGREDIENTS

    • 6 whole ripe figs, rinsed, dried, and sliced
    • 4oz of plain goat cheese
    • 12 thin slices of pancetta cut in half lengthwise
    • 12 arugula leaves
    • 12 Original Black Pepper Crackers

    PREPARATION

    • Preheat oven to 400 degrees
    • Place pancetta in a single layer on a baking sheet
    • Bake pancetta until crisp *this can range from 6-15 minutes dependent on the thickness of the slices and the heat of the oven. We recommend keeping a close eye on them.
    • Drain pancetta crisps on a paper towel and cool (about 10 minutes)
    • On our Black Pepper Crackers, place the crispy pancetta, spread the goat cheese, and top with the fig slices and one arugula leaf

    INGREDIENTS

    • 2 heads of endives, sliced in half lengthwise
    • 3 apricots, pitted, diced
    • 1 log of goat cheese
    • 2 leaves of mint, torn
    • 4 tbs of glazed balsamic

    PREPARATION

    • Cut the endives in half and arrange on a plate
    • Pit and dice the apricots
    • Spread goat cheese in the endive boat
    • Sprinkle the apricots into each individual endive boat
    • Add torn mint leaves
    • Drizzle glazed balsamic

    INGREDIENTS

    • 2 8oz containers of vegan cream cheese
    • 1 cup vegan mayonnaise
    • 4 jalapeños, seeded and sliced
    • 2 cloves of garlic, minced
    • 1 cup vegan cheddar cheese shreds
    • Salt & pepper to taste
    • ¼ cup cracker crumbs (Sea Salt REAL Thin Crackers)

    PREPARATION

    • Preheat the oven to 425 degrees;
    • Mix all the ingredients together reserving ¼ cup of the shredded cheese and the cracker crumbs;
    • transfer to one large or several small baking dishes;
    • Top with the remaining cheese and cracker crumbs;
    • Reduce the oven temperature to 400 degrees before putting the dip in to bake for 20 minutes.
    • Remove from the oven and enjoy warm or cold.

    STRAWBERRY CREAM CHEESE PASTRIES

    Ingredients:

    Pastry Ingredients:

     

    • 2 cups flour
    • 1 tsp. salt
    • 1 ½ cup unsalted cold butter
    • ½ cup cold water

     

    Filling Ingredients:

     

    Directions:

    Preheat oven to 375 degrees.

    Pastry: Combine flour and salt. Add cold butter. Stir in cold water until thick dough forms. Shape dough. Chill in the fridge for one hour. Fold pastries as desired.

    Filling: Mix cream cheese, strawberry jam, SweetLeaf Stevia, and syrup with electric mixer. Add filling to center of dough and fold in.

    Bake 30-35 minutes or until golden brown on top.

    VEGAN SALTED CARAMEL COCONUT ICE CREAM

    Ingredients:

     

    • 1 cup soy milk
    • 1 can coconut milk
    • ¼ cup sugar
    • 1 Tbsp. vanilla extract
    • 2 tsp. tapioca starch
    • ½ tsp. xanthan gum
    • ¼ cup coconut butter
    • ¼ cup maple syrup
    • ½ tsp. salt
    • 1 Tbsp. soy milk powder
    • 1 tsp. vanilla powder
    • 2-5 drops SweetLeaf 2-oz Liquid Stevia

    Directions:

    Ice Cream
    Whisk everything together except the salt, maple syrup and coconut butter. Bring mixture to a boil, then let it cool and thicken. Cover with plastic wrap and refrigerate, making sure a skin doesn’t form.

    Coconut Caramel
    Mix together the coconut butter, maple syrup and salt.

    When ice cream base is chilled, pour into an ice cream maker and churn for 30 minutes.

    With the ice cream maker running, add the coconut caramel mixture and briefly continue to churn so that coconut caramel streaks are visible throughout the mixture.

    Remove from ice cream maker and store in freezer. Serve on a cone with almond butter drizzle and shredded coconut.

    MOCHA SMOOTHIE

    Ingredients:

    Dry Mix

     

    • 3 Tbsp. SweetLeaf® Organic Stevia Extract
    • 1 cup dry milk powder
    • 3/4 cup cocoa powder, to taste
    • 3-4 tsp. instant coffee, to taste
    • 2/3 cup powdered Coffeemate Sugar Free Creamy Chocolate non-dairy creamer

     

    For Each One-Serving Drink

     

    • 4 oz. 2% milk
    • 2 Tbsp. chocolate syrup
    • 1 cup ice cubes, more as desired

    Directions:

    Dry Mix

    Blend all Dry Mix ingredients together and store in a plastic container.
    (Enough for approximately 10 servings.)

    For Each One-Serving Drink

    Put milk into a blender. Add chocolate syrup and approximately 3 Tbsp., slightly rounded, of dry ingredients. Add ice cubes.

    Blend until smooth and serve!
