Cucumber & Tomato Salad

Ingredients

Tomatoes & cucumbers, cut into bite size pieces

1/2 lemon to taste

1/4 cup olive oil

1 to 2 garlic cloves, smashed and diced

1/2 red onion sliced thin

1 or 2 avocados, chopped

1/4 bunch basil or other fresh herb, torn into small pieces or diced

Parma! your favorite flavor for on top.

Directions

Mix everything together. Spoon into individual servings in your favorite bowl.

Green Pea Pesto

When she found a pesto recipe with frozen peas she hesitated, but decided to give it a try. “I would have never thought peas would be so delicious”, said Tara. Then when she found Garlicky Green Parma! Tara realized that it contained many of the same ingredients she was using in her pesto, so she substituted Garlicky Green Parma! for some of her ingredients and this is what she came up with, she loved it and so do we.  You can also go to her post here.If you want to make it oil free, try using a juicy, organic tomato instead of the olive oil.

Ingredients

  • 1 1/2 cups frozen green peas, thawed
  • 1/3 cup fresh basil
  • Juice of one lemon, about 2 TBL
  • 1/3 cup Garlicky Green Parma!
  • 4 TBL olive oil or tomato

Directions

Add all ingredients to a food processor or high-speed blender. Start with one TBL water and add more if needed. Blend until thick but creamy pesto is achieved.

Tonight I tried a self-designed LULU’s Slaw with Parma! It is super easy. Shredding cabbages, carrots and cucumbers first, and then mixing avocado mayo, apple cider vinegar, sea salt, black pepper and Parma! into a bowl. Next, I whisked all the vegetables and ingredients together, stir to combine. And it’s done. For a creamy & yummy slaw, it only needs 5 minutes.
