One of my favorite things while traveling with Porter is their snack lounge! They always have Walkers Shortbread and lots of teas and coffees available for their travelers. This crumbly buttery cookie is perfect for a snack with a hot beverage and just filling enough to satisfy you.

I have known and loved this for a LONG time and was thrilled to find out that they now have GLUTEN FREE versions!  Probably one of the oldest snacks around, this is an awesome ‘reinvention’ while tasting 100% the same!

The Walkers story begins in 1898 when the twenty-one year old Joseph Walker opened the doors of his own bakery with a loan of £50 and the ambition to make the finest shortbread in the world.

In the first year of business, Joseph used every spare moment to perfect his shortbread recipe. It was time well spent. Soon, shooting parties from the local estates were making detours just to visit Joseph’s bakery.

As word spread and demand for his quality shortbread increased, Joseph took the first steps to expanding the business by moving to a larger shop in the Speyside village of Aberlour and investing in a horse and cart to deliver his baking further afield.

Now the Gluten Free comes in 3 versions and I tried them all. My favorite is the Ginger and Lemon Shortbread. Not only does it have the buttery crumbly texture, it also had bits of candied ginger enveloped in a hint on lemon goodness.  I highly recommend that you give these new flavors a try and see if they compare to the original!
