The seafood in the albondigas item is an Alaska cod and shrimp seafood meatball in a tomato chili broth made with traditional Mexican chilies and flavors. Cioppino consists of Alaska cod, calamari, mussels, and shrimp in a rich tomato and wine broth. New Organic Tomatoes from Pacific Foods Capture Bold Backyard Flavor in BPA-Free Cartons

One of the most frequently used pantry staples, canned tomatoes, is getting a dramatic upgrade from Pacific Foods this month. The family-owned company is

introducing five Organic Tomato varieties packaged in BPA-free cartons. It’s promising flavor so good home cooks will notice the difference and think twice about the tomatoes they use both for fresh applications – like bruschetta and salsa – and amazing sauces, stews, soups and more.

“Most people think all packaged tomatoes are the same but it’s simply not true,” said Kimberly Nieves, brand manager at Pacific Foods. “Thoughtful ingredient selection and cooking method can noticeably elevate the flavor of packaged tomatoes, even when cooked into recipes. At Pacific, we start with the most flavorful variety then treat it with care to bring out the perfect balance of sweetness and acidity, natural texture and rich color.”

    Not Your Garden Variety Tomatoes

Pacific’s simple recipe features Roma variety tomatoes, preferred by home canners for their full flavor and meatiness. Gentle steam peeling removes skins without the use of lye, while a “flasheat” preservation process reduces cook time by 90 percent compared to canned varieties. Authentic flavor, texture and nutrition are sealed in with no chemicals, additives or anything artificial.

“Our tomatoes live up to the same standards for quality as all of our other cooking staples like broth, stock and beans,” added Nieves. “We use as few ingredients as possible, making sure each one has a purpose to let the true flavor shine through. One bite of our tomatoes and you’ll taste the difference.”

Pacific’s Organic Tomato varieties include Diced; Strained; Crushed; Crushed with Onion, Garlic & Basil and Tomato Sauce. Naturally free of GMOs and gluten-free, they’re packaged in BPA-free, shelf-stable cartons and available now at natural food stores and conventional grocers nationwide (SRP $3.99-$4.99 for 26.46 oz.).

Get saucy with it!  Enough Miley talk for me – if you want to get really saucy you have to try California brand Mia’s Kitchen. A real kick and a real game changed in the pasta sauce – It is awesome and it is totally fun!

An out of the box, quirky young woman from sonoma. Mia and her mother, Nancy, developed the mia’s kitchen brand to share the bounty of their italian culinary skills with cooks and “foodies” who have an appreciation of fine epicurean experiences with a casual twist and who enjoy “eating gourmet everyday.”

I enjoy eating gourmet everyday and definitely recommend that you give your Tortellini new life with Mia’s Kitchen.

Event LOVE: Red Rock Culinary Experience #RedRockMalbec

I was looking forward to the Red Rock Culinary Experience for weeks, and could barely contain myself on the day of the event. I was so stressed out with preparing for my move, that I was in desperate need for an escape…even if it was only for a little while. I was picked up in a Lincoln Town Car and whisked off to a beautiful townhouse by the lake. I was greeted with lots of smiles, delicious aromas and a glass of the new premium Red Rock Malbec from California. I knew instantly that it was going to be an amazing night.

We enjoyed a menu inspired by the balanced flavours of Red Rock Malbec, which featured dishes MASTERFULLY prepared on hot-rocks, not to mention desserts to die for. I really didn’t want the night to end… there was sweet relaxing live music in the background, everyone was laughing and smiling, the food and drinks were FLOWING *sigh* it was heavenly! We even got to go outside to stack/balance rocks and create our very masterpieces… I was super proud of mine, until I looked to the right and saw that Grace had stacked AND balanced like a million rocks and she was still going!

    Look at her go!

I really had an amazing time, my belly was full from the all the food, and my spirits were HIGH from all the wine and good company, it was truly a beautiful and blessed night.

Red Rock Malbec. So. Damn. Good.

Yes. Pour me another one please 🙂

I sat by the bbq to stay as close to the lobster as possible. It was DELICIOUS.

The Chef and I were instant BFFs!

    A Merry Time @MedievalTimes

As the winter is fast approaching and it is way too cold to be outside, why not switch up your date night routine with fun at Medieval Times!  I must have driven by this place 1000 times and wondered what it would be like. For Canadian Thanksgiving, I finally had a chance to experience the 11th Century at their Toronto venue!

Once we arrived at the venue, there were full costumed greeters and they gave us all table numbers with corresponding color paper crowns and flags. We were with the Red and Yellow Knight and part of their table. Then we were seated front and center to see all the action in our color section.  Each section has their own color, knight and horse that participate in jousting games and other spectacular performances. When the knight wins a competition, he receives a carnation from the Princess which he will toss to the audience in his section.

The food was delicious! We had Tomato Soup in a cast iron skillet (made of plastic!) and garlic bread.  For the main course, we had fire roasted  chicken leg and ribs with potato wedges. YUMMY!  The dessert was an apple pie pastry.

The entire 2 hour event was fun and safe (they drop down nets to prevent debris or dirt to fly at you during the action parts).

What a fun way to spend time and be entertained with friends and family!

Check out where you see the action on http://www.MedievalTimes.com
